You could go celebrity spotting. There's always multiple celebs flying in and out of LAX and you're sure to see at least one if you look around for a few hours.
There isn't much within a walking distance...maybe a restaurant or two. You can rent a car or a taxi and head to Hollywood, or Santa Monica and go to the beach or explore.
Here are a few options:
Go shopping at Howard Hughes Center and see a movie there. They often have live entertainment there during lunch time and the movie theater includes the super lux director's rooms and IMAX. (five minute drive from LAX)
Take a cab to the Cheesecake Factory in Marina del Rey (10 min. drive from LAX), have a cocktail or lunch, then walk along the beach-- it's a swimming beach so take a book and a towel and relax.
Take a cab to Venice Beach and check out famous Muscle Beach and do some shopping on the board walk. Check out all the crazy vendors and street performers there and you can even get a chair massage that's really good. (15 minute drive from LAX)
Take a cab to Burke Williams day spa in Torrance (it will cost about $40 each way) and schedule a massage or facial. If you spend more than $100 on your treatment, you are allowed to use the facilities all day-- which include a relaxation room, steam room, sauna, jacuzzi, reading room, sun deck, and a really nice locker room with showers and everything you would need to get refreshed before getting back on a plane. They will even order lunch for you or you can walk downstairs to one of several restaurants.
The problem with L.A. is the lack of good public transportation. However, you can find a number of cheap rental car shops in the area of LAX that can pick you up at the airport and drop you off. From there, you can take the 405 North Highway and easily get to Santa Monica for shopping and checking the pier and good shops plus a short trip to Venice Beach to see interesting sidewalk shows and do people watching. Unless you can find some kind of tour that takes you there, it is a short drive. I always find it funny when I recommend a beach spot to Australians who have some of the best beaches in the World. But I see the huge flow of Aussies going to Bali and Thailand so...lol

Jon nothing in walking distance. Take primetime shuttle to West Hollywood and explore for a while from there..
